pumpkin soup
1 medium sized pumpkin
water
250gm of diced bacon
1 diced large onion
1 tsp cinnamon
1 tsp nutmeg
salt & pepper
fresh cream or plain yoghurt (optional)
method
Peel
and chop your pumpkin and add to a large pot.
Add enough water to the pot to cover a quarter of the pumpkin.
Slowly cook until pumpkin is soft and mash with a potato masher.
Add a little more water until you reach the consistence of soup.
Add cinnamon and nutmeg.
In a fry pan add diced bacon and onion and fry until bacon and onions are
cooked.
Add this to the pumpkin base and heat through.
Season to taste with salt and pepper.
Add a drop of fresh cream or yogurt in centre when serving (optional).
